Balsamic vinegar of Modena is a traditional vinegar of a hill area near the Appennino modenese mountains that include Modena e Reggio Emilia province. Aromatic vinegar of Modena is an exclusive and mysterious product. Old chronicles tell that emperors went in this area to taste and stock up aromatic vinegar.
The difference between wine's vinegar and balsamic vinegar is in the raw material: for the first one it's wine, for the second one it's  the must of particular Emilia tendril.
